Shortcuts: Chicken ‘N’ Dressing

November is Diabetes Awareness Month, and with Thanksgiving Day fast approaching, here is a healthier alternative to enjoy that classic chicken ‘n’ dressing guilt free. This recipe makes two servings, has 175 calories per serving, 23 carbs, and 15 grams of protein.

INGREDIENTS:

10 oz can of chicken
1/4 onion
1 tbsp butter
1 cup chicken broth
2 packages of instant grits
Poultry seasoning
Salt & Pepper

DIRECTIONS:

•Dice 1/4 onion
•Add to microwave safe dish
•Add 1tbsp of butter to dish
•Microwave for 1 minute or until softened
•In a microwave safe measuring cup, mix 1 cup of chicken broth and 2 packages of instant grits.
•Microwave for 1 minute or until done
• Add 10oz can of chicken to dish with sauteed onions and butter.
•Add poultry seasoning, salt, & pepper to taste
• Add heated grits and chicken broth to dish
•Return dish to microwave for 2 minutes or until done

**Alternative suggestions: Use rotisserie chicken instead of canned chicken. Put the dish with all ingredients in the oven to brown the top.
